Blueberry Honey Muffins (whole wheat)


This snack/breakfast option is a wonderful treat for the kids. Blueberries are loaded with antioxidants. And by adding honey, you add to your child's diet the wonderful medicinal properties of honey and keep processed sugar at bay.

These blueberry muffins are my toddlers absolute favourite!

Ingredients:
1/2 cup of whole wheat flour
1/4 cup oats
3/4 tbsp baking powder
1 egg
2 tsp butter
1 tbsp oil
2 tsp honey (preferably organic pollen honey)

Method:
In a bowl, mix the flour, baking powder and oats. In a separate bowl, whisk the egg, butter and oil and add the honey and berries. Mix both bowls together (add the dry ingredients to the wet). Line a muffin tray with muffin cases and fill each case with half the bater. Bake at 130 C for 30 minutes.
