Iron Balls

As my daughter turned around one, my Pediatrician suggested I should start my little one on iron supplements. In fact, it turns out, that toddlers and preschoolers are most at risk of developing an iron deficiency over any other age group. Not wanting to give supplements, I try to incorporate iron rich food in her diet. Spinach meatballs is a powerhouse of iron!

Ingredients:
1 pound minced beef
1/4 tsp garlic ginger paste
1/2 bunch of spinach
1 egg
Breadcrumbs
Oil for frying
Salt (optional)

Method:
In a pot, boil minced meat with garlic and ginger paste. When the meat looks done, add spinach and allow to boil for a few more minutes.
Separate the water, you can use as stock for future purpose.
Blend the remaining mixture and set aside.
In a bowl,beat the egg.
In a plate, place the breadcrumbs.
In a frying pan, heat oil.
Make balls out of the mixture, dip in egg, roll in breadcrumbs and fry.

Tip: If the meat and spinach mix feel too watery, add breadcrumbs to the mix to make it thicker and easier to manage.
