Organic Spinach Paratha (Palak Paratha)
My daughter is almost 2 years old now and loves her independence. By incorporating spinach in a Paratha she gets to eat by herself, and gets nutritious food! This makes a wonderful breakfast or dinner option.
Ingredients:
1 cup of Chapatti/ atta/ roti flour
7 leaves of organic spinach
3 tsp oil
1 tsp cumin (seeds or powder) (optional)
Salt (optional)
Method:
Kneed the flour (with water) earlier in the day and place in fridge.
In a pot, add 1 tbsp oil, cumin and salt. Add chopped spinach and allow to cook. Drain the excess liquid from this mix.
Take flour in your hand, about the size of a tennis ball.
Roll it on a flat surface. Add flour to the base to prevent sticking.
Once it has flattened, put the spinach mixture in the centre and fold over the sides and cover it as per picture.
Once completely covered, add a little dry flour and roll flat.
On a frying pan, add oil as per your preference and allow it to heat up. Add the Paratha and allow to cook on each.
Serve alone or with yoghurt.
