Pumpkin Might

Pumpkin - a wonderful source of minerals and antioxidants. This simple recipe is easy to make and can eaten as a side by everyone in the household!

Ingredients:
1/2 pumpkin
4 strips of chicken strips
Cheddar cheese
Bread crumbs (optional)

Method:
Boil the pumpkin, mash it and use it as the first layer in your casserole dish. Boil and shred the chicken and add that as the second layer. Top with shredded cheese and finally sprinkle breadcrumbs. Bake for 10 minutes at 120 degrees C.
*to make this a vegetarian option, don't add the chicken.

I served this to my daughter for lunch with chicken, and the next night without chicken. She loved both options! I use the smallest sized Pyrex dishes to bake her food. It's a wonderful size for individual servings for toddlers.
