Buckwheat Pancakes with Strawberries!
My little lady needs variety and I have been toying with the idea of introducing buckwheat to her diet after hearing about its wonderful benefits including the fact that it contains omega 3 oils!
Ingredients:
4 tbsp buckwheat flour
4 tbsp whole wheat flour
1 tsp baking powder
3 tsp butter
4 tbsp honey (add more for sweeter)
1 pack frozen organic strawberries
1/4 cup milk
Method:
Preparing the strawberry sauce
In pot, heat butter and add 14 strawberries.
Once sufficiently heated, remove from stove and mash strawberries.
Add honey into the mix while hot so it mixes nicely.
Mix buckwheat flour with whole wheat flour and baking powder.
Add milk to this mix.
From the above sauce, remove strawberries and mix into the pancake. It's ok for some of the sauce to come into this mix.
Set aside the mix for a little while
In frying pan, add oil and pour enough mix for one pancake.
The texture is just right if you see a few bubbles appear on the sides.
Cook both sides until brown.
Place on plate.
Pour strawberry butter honey sauce on top!
