Spinach and Cheese Muffin
Ever since my toddler has started school, I am constantly looking for quick and easy finger food recipe.
Savoury muffins are increasingly becoming a norm and it's remarkable how easy they are to make. I saw this recipe in a local magazine a little while ago and I highly recommend it!
Ingredients:
1 cup chickpea flour (besan)
1 tsp baking powder
2 tsp olive oil
1 egg
Shredded cheese
Chopped spinach (uncooked)
Water
Method
In a bowl, combine chickpea flour with baking powder.
Make a hole in the centre of the powder and add olive oil and egg and then mix.
Add spinach and cheese to the mix.
Add about 2 tablespoon water.
Mix with spoon and set aside. (the mix should be like pancake or pakora mix)
In muffin tray, add cupcake sheets and fill with the mix.
Bake at 140 C for 30 minutes. The tops will become brownish.
