Blueberry Granola
Toddlers love finger food. It allows them to be independent and feel a sense of accomplishment. And for us, the care givers, it frees up a little time for ourselves :) My little one gets bored of muffin but really seems to enjoy the texture of granola bars. These homemade granola bars make for a great breakfast and/ or snack.
Ingredients:
1 1/2 cup Oats
2 tbsp whole wheat flour
1/2 tsp baking powder
5 tsp honey
2 tsp oil
4 tsp butter
1/4 cup blueberry
Salt (optional)
Method:
Mix the dry ingredients - oats, whole wheat flour and baking powder (and salt if using).
Separate this mix into two bowls.
In Bowl A, the base will be prepared.
Add 2 tsp melted butter and 3 tsp honey, to the mix.
Press this mix on to the base of the baking tray.
(Alternatively, you could use a muffin tray, and press base against muffin case)
In Bowl B, the remaining mix will be prepared.
Add 2 tsp melted butter, 2 tsp honey and 1/4 cup blueberry.
Add the blueberry mix on top the plain mix.
Make sure you press the mix on top of each other.
Bake for 15 minutes at 130 C.
