Lentils with Tomatoes & Brown Rice (Daal Chawal)


Lentils are a wonderful source of fiber and iron. The Worlds Healthiest Food website gives in depth information about the benefits of lentils and goes on to say that 'In addition to its beneficial effects on the digestive system and the heart, the soluble fiber helps stabilize blood sugar levels'.

Ingredients:
1/2 cup split red lentils
1 tomato chopped and diced
1/4 tsp garlic ginger paste
1 tsp onion chopped and diced
1 tbs oil

Method:
In a bowl, soak the lentils for atleast an hour. Throw out the water and clean the lentils completely. Set aside and prepare the rest of the ingredients. In a wok, pour the oil,add the onions and garlic ginger paste. Allow it to cook for a minute, ensuring it doesnt start to burn. Add tomatoes and cook for another 3 minutes. Finally, add the lentils and 1 cup water. Cover and put on medium heat and allow it to cook. After half an hour check if lentils have cooked. Once done, use hand blender to mash everything together.
This mix goes very well with brown rice and/or yoghurt!
