Baked Root Vegetables
One of my favourite things in the world is sweet potato fries! Loaded in Vitamin A & Vitamin C, this vegetable has antioxidants that help lower the potential health risk posed by heavy metals and oxygen radicals. Turnips are very low calorie root vegetables that are a very good source of antioxidants, minerals, vitamins and dietary fiber.
Ingredients:
1 sweet potato
1 turnip
3 tablespoon oil
salt (as per your taste)
Parsley (optional)
Method:
Set the oven to 150 C. In a casserole dish, spread 2 tbsps of oil evenly. Cut both vegetables in wedges or slices. Spread in the casserole dish, pour the remaining oil. Sprinkle salt and chopped parsley. Allow to bake for an hour.
After an hour, if the turnip is still tough, remove sweet potato and bake turnips for an additional 20 minutes on 200C.
