Zucchini Croquette
Its hard to come up with more options for vegetables, and the challenge is to make it fun. I dont think I had ever tried Zucchinis growing up. But when I came across this recipe in Annabel Karmel's book, we tried it at home and loved it! Its delicious and fun :)
Ingredients:
1/2 medium zucchini
1/4 cup grated cheddar cheese
1 egg
1/8 onion
breadcrumbs
Oil
Method:
Shred the zucchini and set aside. Similarly, shred the cheese and set aside. In a pot, heat one tablespoon oil, and saute the onions, for about 2 minutes. Add the zucchini and saute for a few minutes, until soft. Once the zucchini has become soft, keep aside for about 5 minutes so its luke warm. Add the cheese and mix.
After the zucchini has cooled down, add half beaten egg and breadcrumbs to make a thick mixture. Keep the remaining egg and breadcrumbs aside. Make little sausage shapes, dip in egg, and roll in remaining breadcrumbs. This mix will make 6-8 croquettes.
Shallow fry them in oil and enjoy!
