Baked Salmon with Potato and Mushroom Medley

Salmon is an excellent source of omega 3 fatty acid. I have found it tricky to get my toddler to eat salmon, might be the taste. But this simple recipe was a real winner with her! Ingredients: 1 piece of salmon 2 cloves garlic Parsley leaves from three stems 1 teaspoon lemon 3 teaspoon olive oil Salt (optional) 1 organic potato chopped 2 mushrooms chopped Method: Chop garlic and parsley and divide each into two sets. In a bowl, mix one set of garlic and parsley, lemon, one teaspoon olive oil and salt. In a baking tray, place the fish Pour mix on top of the fish and allow to bake at 350 C for 20 minutes In a separate pan, pour oil and add remaining garlic and pasley, add potato. Allow to cook. After 5 minutes, add the mushrooms, cook until tender. Place the fish and the potato side by side and watch your toddler gobble it up!
